Move over Tollhouse…this is the recipe that should be on the chocolate chip bag!
I’m a sucker for a good chocolate chip cookie. And boy have I used a lot of recipes. Some good, some bad, but this one is my favorite. I make it at least once a week, and by now my older daughter can make them almost from memory.
I grew up thinking there was just one way to make chocolate chip cookies. We all know the recipe because it’s been on the back of the Nestlé bag for generations, but is it really that good? Maybe if done perfectly, and at low elevation. But usually they turn out flat and tough instead of chewy. Or that’s my opinion anyway. I prefer my cookies puffy, chewy, and basically raw, my husband prefers them overcooked, oops, I mean fully cooked. But maybe you like them somewhere in the middle.But no matter how long you cook them for, they’ll be delicious at any stage, even the dough is yummy, I know because I usually eat about 3 cookies worth of dough before they ever make it into the fridge.
Which brings me to my next point, the key to these cookies is to refrigerate them for a minimum of one hour before baking them. I like to refrigerate them on the day I make them, cook a few that night, and then freeze the rest. That way we have fresh baked chocolate chip cookies every night, and they can last up to a week in your freezer. Probably longer but ours never last more than 5 nights.

Tip: I recommend not using a stand mixer, or a hand mixer. Mixers have the potential to over mix the wet ingredients, which makes the cookies tough. Instead I mix with a fork and then by hand, working the dough almost like you would pie dough.
Mise En Place
- Preheat your oven to 350 degrees
- If you are using a non-stick sheet tray don’t worry about greasing it, if you aren’t using non-stick grease lightly with butter
- Have a container ready to put the dough balls in while they rest in the fridge

Ingredients
- 3 cups all purpose flour
- 1 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup softened butter
- 1 cup white sugar
- 1 cup brown sugar
- 2 eggs
- 2 tsp vanilla
- 1 1/2 cups chocolate chips
Preparation
- Mix dry ingredients until combined
- Cream together butter, white and brown sugars
- Add eggs and vanilla and mix until fully combined, being careful not to over mix
- Add dry ingredients into wet, and mix using a fork or your hands until dough forms a ball and is fully incorporated
- Add chocolate chips and mix by hand again
- Either using a dough scoop or your hands make balls of dough to put in the fridge for 1 hour minimum
- Bake for 10-13 minutes (depending on how cooked you like them) at 350 degrees

My Favorite Chocolate Chip Cookie Recipe

3 cups flour
1 1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup softened butter
1 cup white sugar
1 cup brown sugar
2 eggs
2 tsp vanilla
1 1/2 cups chocolate chips
Directions
- Mix dry ingredients until combined
- In a separate bowl cream butter and sugars together until smooth
- Add eggs one at a time, mixing between each addition, then add vanilla
- Add dry ingredients into wet, using a fork or a rubber spatula, or your hands mix everything together until just combined, taking care not to over mix. Over-mixing will lead to tougher cookies.
- Add chocolate chips
- Using your hands or a dough scooper roll dough into 2 inch balls, give or take a bit. Truthfully the size of your dough balls doesn't really matter
- Stick in the fridge for a minimum of one hour, or up to 3 hours
- Bake in a 350 degree oven for 10-12 minutes
Notes
- I like to bake a few cookies each night, and the rest go in a baggie in the freezer until I am ready to cook them. They'll last in the fridge for up to 2 weeks.
