My Absolute Favorite Banana Bread

One of the first things I ever learned to bake was banana bread…

It wasn’t this exact recipe. But that first recipe I used was good enough, however I knew it could be better. So I spent a while, probably too much time (I was 18, in culinary school and I didn’t have kids yet, so I had lots of time to perfect an already good banana bread recipe) making this recipe over and over again. Tweaking little things each time. Until finally, the best and final recipe was born. 

I refused to share it with anyone for over a decade. But then I realized that I can’t really have a food blog if I’m unwilling to share recipes. So here you have it. My favorite banana bread recipe, and I hope you enjoy it as much as I do. 

I actually hate bananas, I think they are a food best reserved for babies and dogs, yes your dogs can eat bananas, mine LOVE them. So when I was younger I figured I probably wouldn’t like banana bread. Considering my least favorite fruit’s name is literally in the title of the bread.

Most banana breads I came across had chunks of bananas in them and texturally that’s just not pleasant, in my opinion anyway. But this recipe blends the wet ingredients so there are no chunks of banana in this bread. 

 

Another thing I love about this recipe is the option to either use greek yogurt, or sour cream as the wet ingredient. I usually just use whichever one I have in my fridge. I have never noticed a difference in the final product when I use one vs the other. Usually i have homemade yogurt in my fridge so I’ll just use that, but know that sour cream will work just fine. 

 

This recipe also makes great banana muffins, and you don’t have to make any adjustments to the recipe, except the vessel you cook it in. Sometimes I will make muffins simply because my kids think muffins are more fun than a slice of bread, but either way I always warm it up a bit and spread butter on top. That is definitely the best way to serve banana bread or banana muffins.

Dry Ingredients

  • 2 cups all purpose flour

  • 3/4 cup sugar

  • 1 tsp baking soda

  • 3/4 tsp baking powder

  • 1/2 tsp salt

  • 10 TBSP salted butter softened

  • Brown sugar for topping *optional

  • Wet Ingredients
  • 5 very ripe bananas

  • 1/2 cup plain full fait yogurt, greek yogurt, or sour cream

  • 2 eggs

  • 2 tsp vanilla

Directions

  • In a medium sized bowl mix your dry ingredients until combined
  • Cut your butter into small cubes, adding your butter into your dry ingredients a few cubes at a time, use either a pastry cutter or a fork to combine the butter and the dry ingredients until it resembles wet sand
  • In a blender add all your wet ingredients and blend until smooth
  • Add the wet ingredients into the dry ingredients and mix until just combined. Taking care not to over mix your ingredients
  • Lightly grease a regular sized bread pan
  • Pour batter into bread pan, topping with a handful or brown sugar if you desire
  • Cook for 65-70 Minutes in a 350 degree oven, or until the top is golden brown and an inserted toothpick comes out clean
  • Let cool completely before serving
  • Best served warm with butter on top, enjoy!
